Sour Cream Banana Cake
  1. Cream and beat together butter, sugar, eggs, and vanilla until thick and fluffy.

  2. Sift together flour, baking powder, baking soda, and salt.

  3. Add dry ingredients to the creamed mixture alternately with sour cream.

  4. Add mashed bananas and chopped pecans, stir briefly.

  5. Turn into a buttered baking pan (13 x 9 by 2 inch) and bake for 35-40 minutes in a pre-heated 350 degree oven.

  6. Test with a toothpick inserted into the center for doneness.

  7. Cool well and frost with Gramma Doreen’s Caramel Frosting.

  8. For the frosting, melt butter and brown sugar, bring to a boil over low heat for two minutes, stirring constantly.

  9. Add milk and continue stirring until the mixture returns to a boil.

  10. Remove from heat, add vanilla, mix well and cool down for 10 minutes.

  11. Add icing sugar and beat until smooth and spreadable.
