Healthy Granola Cookies Recipe
  1. Preheat oven to 350F (180C). Line a baking tray with parchment paper and set aside.

  2. Place all ingredients in a mixing bowl and mix until well combined.

  3. Using a cookie cutter or a small cake ring shape the cookies: place the ring on the tray, then spoon into the ring 2-3 tablespoons of the granola mixture. Press the mixture with the back of the spoon.

  4. Bake for 20-25 minutes or until golden. Note: keep an eye while baking, the baking time may change from oven to oven.

  5. Note 2: With this method, the cookies may spread, so you can use the following method:

  6. Other way to shape the cookies: spoon 2-3 tablespoons of the granola mixture on the baking tray, then cover the batter with aluminum muffin cups or any other tool. This will help prevent the cookies from spreading. Note: bake for 20-25 minutes, until golden. At the last 5 minutes, remove muffin cups and keep baking until golden.

  7. Let cool completely.
