Tofu Cream Cheese And Roasted Tomatoes Breakie
  1. Slice 4 tomatoes into thick coins (about .5 cm in diameter)

  2. Fry the tomato coins on a medium low heat with oil, sea salt and parsley for 15 minutes

  3. When the skin starts to peel away, the tomatoes are ready and have the same texture as roasted tomatoes

  4. Take 1 block of tofu and add to a blender or food processor

  5. Add 2 tbsp of nutritional yeast, 1 tsp garlic salt, 1 tsp salt and 2 tsp Dijon mustard

  6. Blend the tofu mixture until smooth

  7. Assemble your toast by smearing the cream cheese on and topping with the roasted tomatoes
