Roasted Cauliflower Potato Soup
  1. Add the potatoes, cauliflower, garlic, onion, olive oil, salt, and pepper to a baking dish and cover with aluminum foil. bake at 400F for 25-30 minutes covered and 10 more minutes uncovered.

  2. Add all the ingredients to a blender along with vegetable broth and blend until smooth.

  3. Pour into a bowl, top with coconut cream, fresh thyme, grated cheese, and crushed pepper.
