Remove skin from sausages, add to a bowl and drain with salt, pepper and mix herbs. Mash with a fork.
Lay out puff pastry, cut in half lengthways. I would then add brie first (not like video) top with cranberry sauce and sausage meat. Brush the sides with egg wash and roll over. Press down the sides with a fork to secure shut.
Cut into 12 pieces. Brush over with more egg wash, bake in the oven at 200C for 20-25mins.
Serve with a pot of hot gravy - enjoy!
