Cottage Cheese and Soft Peach Compote
  1. Prepare the Peach Compote: If using fresh peaches, peel and chop them into small, bite-sized pieces. Place them in a small saucepan over medium heat. If using canned peaches, drain them and chop into similar sizes. Heat them gently in a saucepan. Add vanilla extract and a touch of water (about a tablespoon), and simmer the peaches until they are soft and have released their natural juices, forming a light compote. This should take about 10-15 minutes. Optionally, sweeten with honey or sprinkle with cinnamon.

  2. Combine and Serve: Allow the peach compote to cool slightly. Spoon an equal amount of cottage cheese into 7 serving bowls or containers. Top each with an equal portion of the peach compote. Refrigerate in airtight containers until ready to eat. Stir gently before serving to combine the flavors.
