Roast Salmon And Greens Salad
  1. Preheat oven to 220C and line a large baking tray with baking paper

  2. Place the salmon in the centre of the tray then surround it with the sliced Brussel sprouts and broccoli florets. Drizzle with olive oil, salt and pepper and bake for 15 - 25 minutes until the greens are starting to crisp up around the edges and the salmon is cooked.

  3. Whilst these are roasting, whisk together all of the dressing ingredients and leave aside.

  4. Remove the salmon and greens from the oven and allow to cool for 5 minutes then add to a large bowl and toss with the almonds and edamame.

  5. When it's time to serve, top with the dressing and the fried shallots and enjoy as is or with some rice.
