Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk eggs, sugar, orange zest, juice, and avocado oil until combined.
Add dry ingredients and mix with a large spoon until smooth and fully incorporated.
Divide dough into two equal portions.
On a floured surface, roll each piece to 12 x 6 inches.
Spread jam evenly and sprinkle generously with nuts.
Roll up carefully, sprinkle with sugar and place seam-side down on baking sheet.
Bake 20–25 minutes, until golden and center is firm.
Cool slightly, slice.
Return slices to a 300°F (150°C) oven for 20 minutes until crisp.
Cool completely before storing.
