High Protein Breakfast Sandwiches
  1. Heat oven to 350°F (175°C). Prep a 9x13 inch baking dish with cooking spray. Whisk together the eggs, cheeses, tomatoes, spinach, garlic powder, salt, and pepper in a bowl. Pour into the baking dish & bake 30-40 min, until eggs are set.

  2. While the eggs bake, add your chicken sausage ingredients to a bowl. Mix to combine & form 8 patties. Heat a skillet on medium heat and add olive oil until hot. Cook patties for 3-5 min on each to an internal temp of 165℉ (75°C).

  3. Once the eggs are done, cut into 8 pieces.

  4. Assemble your sandwiches! If you want to freeze them, wrap them tightly in parchment paper. To avoid freezer burn, put the wrapped sandwiches in a freezer-safe bag.
