Roll out puff pastry directly onto a baking tray and fold the edges slightly to create a rustic dish shape
Spread 2 tablespoons of Dijon mustard evenly over the pastry base
Mix 4 tablespoons of tomato sauce with the mustard
Sprinkle bread crumbs over the mustard and tomato mixture
Arrange sliced tomatoes generously over the base
Season with salt and pepper
Sprinkle with herbes de Provence or dried Italian herbs
Drizzle with 5 tablespoons of olive oil
Bake for 35 minutes until golden and the crust is flaky
Remove from oven and let cool slightly before serving
Cut into slices and serve
