Pour 1 cup of boiling water into a medium mixing bowl. Add the sugar-free gelatin powder and stir for 2 full minutes until completely dissolved with no granules remaining.
Allow the dissolved gelatin to cool at room temperature for 5 to 10 minutes until warm but no longer steaming hot.
Add ½ cup of non-fat Greek yogurt to the warm gelatin. Whisk firmly for at least 60 seconds until the mixture is completely smooth, creamy, and uniform with no white streaks.
Divide the mixture evenly between 2 small glass ramekins or bowls. Cover loosely with plastic wrap.
Place in the refrigerator for at least 2 hours, or overnight, until fully set and firm. Serve chilled.
