Bite-sized Meatball Sub Pockets
  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, salt and pepper, minced onion, garlic cloves, and chopped parsley.

  2. Shape into small balls (about 1 ½ inch in diameter).

  3. Place meatballs on a tinfoil-lined baking sheet.

  4. Broil for 7 to 10 minutes. Set aside until cool enough to handle.

  5. Preheat oven to 400°F.

  6. Flour your work surface and place puff pastry squares onto surface.

  7. Add 1 heaping tablespoon of shredded mozzarella onto center of pastry square.

  8. Place meatball on top of the cheese.

  9. Wrap puff pastry around meatball.

  10. Place on tinfoil-lined baking sheet.

  11. Brush with egg wash.

  12. Bake for 25 minutes.

  13. Serve atop tomato sauce, and garnish with basil and Parmesan.
