Drizzle chicken breasts with 1 tsp olive oil and season with salt, pepper. Massage in 2 tbsp fresh oregano, 4 minced garlic cloves, the juice & zest of 1 large lemon, 1 tbsp smoked paprika. Marinate overnight if possible.
Bring a pan to medium heat, add the chicken for 3 mins on first side with lid on, flip, cook for 8 more mins with the lid on, let rest for 5 mins, then cut them into cubes.
