Okonomiyaki Egg Bites (no-flour)
  1. Lightly brush a muffin pan with oil.

  2. Divide shredded cabbage, bacon, and green onion into each cup.

  3. Whisk eggs with salt and hondashi. Fill each cup about 80% full so it doesn't overflow while baking.

  4. Bake at 360°F (180°C) for about 20 minutes, until set and lightly golden.

  5. Mix the okonomiyaki sauce ingredients (ketchup, Worcestershire sauce, soy sauce, oyster sauce, and sugar or honey). Top each muffin with sauce, Kewpie mayo, parsley and bonito flakes if desired.
