Preheat the oven to 350F. Grease three 9” cake pans with butter, then dust with flour. Line the bottom with parchment paper rounds. Set aside.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Set aside.
In a separate large bowl, whisk together the buttermilk, avocado oil, eggs, and vanilla until combined.
Add the dry ingredients to the wet, and whisk until combined. At this point the batter should be very thick, similar to brownie batter.
Pour in the hot coffee, and stir quickly until well combined. The batter is going to be very thin!
Divide the batter evenly among the three prepared cake pans (about 664g of batter should be in each to ensure even layers).
Place the cakes onto the middle rack of your oven, and bake at 350F for 30-35 minutes, until a toothpick comes out clean or with moist crumbs.
Remove the cakes from the oven and allow to cool in the pan for 15-20 minutes. Then remove from the pan and transfer to a wire cooling rack to cool completely.
Prepare the chocolate frosting. In a large bowl (or the bowl of a stand mixer fitted with the paddle attachment), beat the butter and cream cheese together on high speed until light and fluffy, about 2-3 minutes.
Add in the cocoa powder. Start by mixing on low and increase the speed as time goes on, until combined.
Then while mixing on low speed, gradually add the powered sugar, one cup at a time. Once all of the powdered sugar has been added, beat in the heavy cream, vanilla, and salt. Beat on medium speed until well combined, and the frosting is light and fluffy. Set aside.
If needed and using a serrated knife, slice the tops of each cake layer off to even.
Place one cake layer cut side up on a cake stand or platter. Spread 3-4 large cookie scoops of the chocolate frosting across the surface of the cake, pushing it to the edges. Place another cake layer on top and repeat with the frosting.
After the last cake layer is added on top, with an offset spatula, spread the remaining frosting evenly all over the cake.
Use a bench scraper to smooth the frosting on the outside of the cake if desired.
Decorate and garnish as desired.
