Preheat your oven to 180°C (160°C fan).
Line a cake tin making sure the base is well covered so nothing sticks.
Arrange half of your tinned apple slices on top and sprinkle with a little golden caster sugar.
In a bowl, beat your melted butter and sugar together until light and fluffy.
Add in about 2 tbsp of apple juice from the tin, followed by your eggs one at a time, mixing well.
Gently fold in the self-raising flour until just combined.
Pour the batter over the apple slices, smoothing the top and top with the remaining apples.
Bake for 45-50 minutes on the middle shelf until golden and fully cooked through.
Let it sit for about 10 minutes once out of the oven, then carefully lift out and onto a plate and enjoy warm or cool.
