Dandelion Honey
  1. Rinse petals gently.

  2. Add petals to a pan with water, lemon, and ginger.

  3. Simmer for 40 minutes with the lid on.

  4. Leave to cool for 12 hours.

  5. Use a sieve and put the botanical water in a pan with coconut sugar.

  6. Simmer for 60 minutes.

  7. Once cooled it will set.

  8. Store in the fridge.
