Zucchini Feta Skillet Breakfast
  1. Heat olive oil in cast iron skillet, add zucchini slices and saute until golden.

  2. Add eggs, feta and season with salt, pepper and oregano.

  3. Cover with a lid and cook until egg whites are opaque and fully cooked but yolks are still runny.

  4. Enjoy immediately with sliced avocado and a cup of green tea.
