Lightly spray gummy molds with non-stick spray or oil for easy release.
Mix apple juice and Fireball whisky until blended.
Sprinkle gelatin over the liquid and let sit 5 minutes to bloom.
Whisk gently until smooth; add sugar, peppermint extract, and citric acid. Stir until glossy.
Fill molds and refrigerate 4 hours or until firm.
Remove from molds, sprinkle with candy cane bits, and enjoy chilled.
