To make the simple syrup, combine 2 cups of water and 2 cups of sugar in a pot. Whisk the mixture until the sugar is fully dissolved.
Place the pot on the stove over medium heat and add the zest of 2 lemons. Whisk to mix and bring the mixture to a simmer.
Once it reaches a simmer, remove the pot from the heat and squeeze in the juice from the zested lemons.
Add a small amount of pure vanilla extract, whisk to combine, and set the syrup aside.
For the lemonade, add 1 cup of water and ½ cup of the prepared simple syrup to a blender.
Cut 1-2 lemons into thick wedges and add them to the blender.
Blend the mixture for 10-15 seconds, then let it rest for another 10-15 seconds before blending again for an additional 5 seconds.
Strain the lemonade through a strainer and serve it over ice.
