Instant pot lamb shanks
  1. Thin-slice the vegetables.

  2. Heat oil in instant pot on saute (I used lamb tallow).

  3. Brown lamb shanks on all sides, then remove.

  4. Saute vegetables with seasonings.

  5. Add some broth to deglaze pot.

  6. Return lamb shanks.

  7. Add enough broth to half-cover the lamb shanks.

  8. Put lid on pot and set to meat/stew.

Serve over polenta.
