Preheat oven and the muffin tin to 425°F
Mix everything except the butter into your batter
Melt the butter into the cups of your preheated muffin tin
Pour batter onto melted butter halfway up each cup but don’t mix it
Bake for about 20 minutes undisturbed until risen (if you used regular whole milk it will rise much higher than what you see in my picture, that’s okay, that’s why they are also called “pop overs”) and edges are golden brown.
Pull them and rest them a few minutes, garnish as savory or as sweet as you like and serve.
