Tahini drizzle
To serve
Roughly chop the zucchini, bell peppers and onion; slice the cherry tomatoes
Add the vegetables, gnocchi and lentils to a baking tray, cover generously with olive oil, season with salt, pepper and , combine and roast in the oven at 200° until soft.
Assemble the tahini drizzle by combining the ingredients in a separate bowl
Serve the gnocchi, drizzle the sauce over and garnish with pickled onions and parsley
