Vegan Bbq Pulled Chicken Sandwich
  1. Pat tofu dry and shred it with a grater.

  2. Toss tofu in mixture of soy sauce, oil, cumin, paprika and salt. Spread on a baking sheet and bake at 350 F for 30 minutes, stirring half way through.

  3. Add all bbq sauce ingredients is a medium bowl and whisk until combined.

  4. Add all coleslaw ingredients to a large bowl and mix until combined.

  5. Once tofu is finished baking, add to a large frying pan. Pour in the bbq sauce, stirring until combined on medium low heat for 3-5 minutes.

  6. Add a spread of vegan mayonnaise to the bottom bun, then add lettuce, generous amount of bbq pulled tofu chicken, coleslaw, then top with bun. Repeat for the remainder of sandwiches.
