Preheat the oven to 350°F (175°C). Lightly grease a 9-inch pie dish with olive oil or non-stick spray.
In a skillet, heat olive oil over medium heat. Add diced onion and bell pepper and sauté for 3–4 minutes until softened. Stir in chopped spinach and cook for 2–3 minutes until wilted. Season with salt, pepper, and garlic powder. Let cool slightly.
In a large bowl, whisk together eggs, milk, and cottage cheese until smooth. Add Italian seasoning, salt, and pepper.
Fold in shredded cheddar and the cooled spinach mixture. Stir until evenly combined.
Pour mixture into prepared pie dish and spread evenly. Bake for 40–45 minutes, until the center is set and the top is golden.
Let rest for 5–10 minutes before slicing. Serve warm or at room temperature.
