Add your gelatine to 125g of water and let it sit for 5 minutes
To a pot add your remaining 125g of water, honey, and vanilla extract and bring to the boil
Once boiled take out of the saucepan and transfer into a mixing bowl
Add your gelatine mixture to the bowl and let it melt in
Then using a hand mixer keep whisking until still peaks form. As soon as it looks like a meringue consistency take it out and pour into a lined baking tray
Set in the fridge for at least 2hrs (or overnight) and then take out and cut into squares
Store in the fridge and try not to finish them within 24hrs (or do, I'm not judging 🥰)
