For the caramel layer:
For the topping:
Mix almond flour, maple syrup, and melted coconut oil. Press into a parchment-lined loaf pan and freeze for 15 minutes.
Blend dates, peanut butter, vanilla, salt, and water until smooth. Spread over the base.
Sprinkle chopped peanuts over the caramel and freeze for another 15 minutes.
Melt dark chocolate with coconut oil and pour over the top. Freeze for 30 minutes until set, then slice into bars.
