Eggplant Curry
  1. Cut eggplants in chunks and heavily salt it.

  2. Wait 10mins and pat dry them.

  3. Fry in some oil until charred.

  4. Roast ginger, garlic, curry powder, chili powder, and tomato paste for 4min.

  5. Add water and coconut milk and let it simmer 10mins.

  6. Finish with salt, lemon juice and a touch of agave.

  7. Serve with rice.
