Prep the Base: Place the diced onion, carrots, celery, and cubed potatoes in the bottom of your slow cooker.
Add Protein & Spices: Place the raw chicken breasts on top of the vegetables. Sprinkle with thyme, rosemary, salt, and pepper. Add the minced garlic.
