Preheat your oven to 370. Take your challachor brioche bread and slice it into thick pieces and remove the crust. Set aside.
In a mixing bowl, combine softened butter, honey and sugar. Stir until the mixture is well combined.
Generously coat each side of the bread slices with the honey butter mixture, ensuring every inch is evenly coated
Slide the honey-coated bread into the preheated oven and bake for 10 minutes. Carefully flip each slice and continue baking for another 10 minutes until they are golden brown.
Take out of the oven and allow the toasts to cool briefly on a cooling rack.
Take a cup of blueberries add sweetener of choice and lemon juice. Reduce until thickened. Serve the toast with whipped cream and top off with the blueberry sauce
