Preheat your oven to 400°F.
Place the thighs on a baking sheet, tinfoil below to catch juices.
Add the spices to top of chicken thighs
Arrange the seasoned thighs in a single layer on a rimmed baking dish, such as a 9 X 13-inch baking dish.
Pour salad dressing over chicken (olive oil, Dijon, honey or maple syrup, onion, white vinegar…)
Bake until the thighs are cooked through, juices run clear, and an instant-read thermometer inserted into the middle of the largest thigh reads 165ºF. In my oven, this takes about 25 minutes.
add juices to cast iron while chicken rests.
Add spinach, diced tomatoes, and garlic. Sauté in juices and fat. Add Alfredo sauce. Slice chicken and layer in cast iron. Serve over pasta.
Serve immediately.
