Red Cabbage Coleslaw
  1. Stir shallot, vinegar, lemon juice and salt together in a large bowl. Let stand until the shallot is softened, about 5 minutes.

  2. Add honey, mustard and pepper to the shallot mixture; stir to combine. Add cabbage, carrots and parsley; toss to coat. Let stand, tossing occasionally, until the cabbage is tender, about 10 minutes.
