Banana Craisin Mini Muffins
  1. Preheat oven to 350°F. Spray a mini muffin pan with nonstick spray. Set aside.

  2. Cream butter, sugar, baking soda, and salt, about a minute.

  3. Add egg, vanilla extract, banana, and sour cream; beat until smooth and creamy, about a minute.

  4. Add flour and beat on low just until combined.

  5. Add pecans and Craisins and mix well.

  6. Using a 1 ½-inch diameter ice cream scoop, fill mini-muffin cavities ¾ full.

  7. Bake at 350° F for 15 to 18 minutes, or until golden brown and middle springs back when pressed.

  8. Remove from oven and let sit for 10 minutes.

  9. Remove from mini muffin pan. Cool completely.
