Begin by placing the sourdough starter into a cocktail shaker. Its rich tang will form the heart of your martini. To the starter, add the vodka, dry vermouth, and a generous splash of olive brine. Drizzle in the extra virgin olive oil for a touch of smoothness, and toss in a fresh sprig of dill.
Fill the shaker with ice, ensuring it's packed tightly to chill the mixture thoroughly. Seal the shaker and give it a vigorous shake for about 15 seconds, or until the ingredients have melded together beautifully and the shaker feels cold to the touch.
Retrieve your martini glass from the freezer. Strain the mixture into the glass, allowing it to settle.
To garnish, thread a stuffed olive onto a skewer—choose something bold like garlic, jalapeño, or even blue cheese for an extra punch of flavour. Add a couple of delicate pickled cucumber slices, nestling them gently into the glass. Tuck a fresh sprig of dill alongside for a herbaceous lift, and finish with a slender lemon peel twist to brighten the drink with a zesty finish.
