Mix ground pork, garlic, shallots, green onions, fish sauce, oyster sauce, sugar, chicken bouillon, and five spice powder together until slightly tacky
Form into small, thin patties
Toss pork belly with garlic, shallots, green onions, fish sauce, oyster sauce, sugar, chicken bouillon, and five spice powder and marinate at least 3–4 hours
Grill patties and pork belly until deeply caramelized with light char, flipping regularly
Stir warm water, fish sauce, sugar, and lime juice or vinegar until sugar dissolves
Add ladles of fish sauce broth, do chua, and grilled meats into a bowl
Serve noodles, herbs on the side and dip as you eat
