Chocolate Marquise With Cardamom Custard
  1. Line a 20cm spring form cake tin with cling film.

  2. Put the chocolate and coffee in a bowl over a pan of gently simmering water, melt the chocolate, then gradually beat in the butter, icing sugar, and egg yolks.

  3. Fold in the whipped cream and beaten egg whites.

  4. Spoon the mixture into the prepared tin and chill overnight until firm.

  5. For the cardamom custard, mix egg yolks with sugar and cardamom, heat milk and cream, pour over egg yolk mixture, thicken over gentle heat, strain, and chill.

  6. To serve, cut the marquise into slices and serve with custard.
