  1. Blend everything until completely smooth.

  2. Shape into a tight log or oval, wrap in parchment then foil.

  3. Steam for 60 minutes.

  4. Cool completely and refrigerate overnight.

  5. Freeze for 30 to 45 minutes for easier thin slicing (optional).

  6. Shave into thin slices and pan fry until browned and crispy around the edges.

  7. Serve in warm pita with lettuce, tomato, red onion, and your favorite tzatziki.
