Slice the smoked sausage and brown in a pan.
Once the sausage is browned, remove them from the pan and set aside. Keep the grease in the pan.
Throw the diced onion into the pan with the sausage grease. Sautee the onion for a few minutes until it starts to soften.
Once the onions have softened, throw in the tablespoon of minced garlic and cook for another minute.
After the minced garlic and onions are cooked, throw in 3 tablespoons of butter and the drained can of Rotel. Season with black pepper and Cajun seasoning.
Pour in the water and bring the mixture to a boil.
Once the mixture is boiling, add in the rice and the seasoning packet that comes in the box. Reduce the heat, put the lid on the pan, and let it simmer for around 15 minutes.
After the 15 minutes when the rice is fully cooked, add the smoked sausage back in, stir, and serve.
