Ingredients:
Preheat skillet/pan on medium heat and preheat oven to 400f
Cut chicken into thin slices, about ½" thick and 2" long
Season chicken with Cajun seasoning or similar
Pan fry chicken on medium heat until slightly browned and fully cooked through, about 6 minutes. Turn once. Remove and set aside.
While chicken cooks, cut veggies. Thinly slice bell pepper, about ½" thick and 2" long. Cut ends off onion, remove outer layer, and then cut in half. Cut into ¼" strips. Cut stem off jalapenos and cut into ¼" rings
Once chicken is cooked, remove from pan and add bell pepper and onion to pan. Sauté on medium heat with a bit of oil until soft.
Lightly coat both sides of a tortilla with olive oil. Lay flat and cover half of the tortilla with a layer of cheese. Add a third of the chicken and veggies to the same half of the tortilla. Add another layer of cheese and fold in half. Repeat with the other 2 tortilla.
Bake all 3 tortilla for 5 minutes or until all cheese is melted and desired browning of tortilla has occurred.
Remove from oven and serve as is or with a side of chips/guac (I like to dunk my quesadilla in guac).
