Ham And Lentil Soup
  1. Heat olive oil in a Dutch oven over medium heat.

  2. Add carrots, celery, and onion with 1 teaspoon salt; cook until softened, about 5 minutes.

  3. Stir in garlic, spices, and tomato paste. Cook 2 minutes more.

  4. Add broth, tomatoes, lentils, ham bone, and bay leaves. Bring to a boil, then reduce heat and simmer for 45 minutes.

  5. Remove ham bone and bay leaves. Shred remaining ham, return to the pot.

  6. Stir in lemon juice and zest. Season with salt and pepper to taste.

  7. Serve warm with crusty bread.
