Line a small plate with parchment paper and scoop 6 tablespoons of Nutella onto it, then freeze until firm
Preheat oven to 350°F
In a bowl or stand mixer, add cubed cold butter and beat on high until creamy for about 2 minutes
Add brown sugar and granulated sugar, beat for 2-3 minutes on high until well combined
Add egg, egg yolk, and vanilla bean paste, mix on high for 3-4 minutes until well incorporated
In a separate bowl, combine all purpose flour, baking powder, baking soda, salt, corn starch, and instant coffee
Gradually add dry ingredients to the wet mixture, then add chocolate chips and mix until just combined
Scoop 6-7 large dough balls and flatten slightly
Place a frozen Nutella scoop in the center of each, wrap dough around it, and roll into a tall ball shape
Place cookies several inches apart on baking sheet
Bake for 25-30 minutes until the top is golden and crispy with a chewy, soft center
Let cool completely before serving
