In a sauce pan or small pot over low heat, add all of the ingredients for the spicy peanut sauce.
Keep stirring with a wooden spoon until the peanut butter is well mixed into the sauce.
In the bowl, add the cooked rice noodles, broccoli florets, raw carrots, purple cabbage, grilled chicken breast, and green onions.
Top with 1-2 tbsp of the spicy peanut sauce.
