Healthy Chickpea Winter Curry
  1. Add onions, garlic and ginger. Cook until softened.

  2. Add chopped tomatoes

  3. Add spices and cook until a paste is formed

  4. Add chickpeas and mix well, coating all the chickpeas

  5. Add par-cooked sweet potato

  6. Add spinach and cook until wilted down

  7. Add coconut milk, bring to a boil and then simmer until the sweet potato is cooked through
