In a skillet, saute an onion for a few minutes until it begins to soften.
Use a little splash of the chicken stock to deglaze the pan and pour this all into the crockpot.
Add the remaining chicken stock, ranch seasoning, and potatoes and stir together.
Cook on low for about 3 hours, until the potatoes are nearly done.
Stir in the cheddar, and add the block of cream cheese on top.
Cook for another 1-2 hours, and then stir in the cream cheese.
Throw in a few handfuls of kale and turn to warm for another half hour.
Top with whatever you enjoy!
