Cowboy Butter Steak Bites With Roasted Garlic Mashed Potatoes
  1. For the Steak Bites:

  2. Season the steak with seasoning salt, black pepper, garlic powder, and onion powder.

  3. Melt the butter in a skillet over high heat.

  4. Add the seasoned steak and sear for 2-3 minutes per side, until a nice crust forms.

  5. Remove from heat and let rest for 5 minutes before cutting into bite-sized pieces.

  6. For the Cowboy Butter:

  7. In a small bowl, combine the butter, minced garlic, dijon mustard, chives, parsley, lemon zest and juice, paprika, cayenne (if using), chili flakes (if using), black pepper, and garlic powder.

  8. Stir to combine.

  9. For the Roasted Garlic Mashed Potatoes:

  10. Preheat oven to 400°F (200°C).

  11. Wash and cut the potatoes into 1-inch cubes.

  12. Place the potatoes in a pot and cover with cold water.

  13. Bring to a boil and cook for 15-20 minutes, until fork-tender.

  14. Drain the potatoes and return to the pot.

  15. Add the roasted garlic, heavy cream, and melted butter.

  16. Mash until smooth and creamy.

  17. Season with salt and pepper to taste.
