Preheat oven to 200c
Add your broccoli, cauliflower, red onion, garlic and herbs in a roasting pan. Drizzle over some oil and mix well
Roast the vegetables for 30-40 minutes until golden
Once your vegetables have roasted, add some peas, spinach, stock and squeeze out the roasted garlic. Blend until smooth
If too thick, you can add some more stock/cream/coconut milk
