In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, whisk together the egg, milk, and 1 tablespoon of honey.
Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).
In a large skillet, heat ½ inch of vegetable oil over medium heat.
Scoop the batter by the tablespoonful and carefully drop it into the hot oil.
Fry the fritters for 1-2 minutes per side, until golden brown.
Drain the fritters on a paper towel-lined plate.
Drizzle the warm fritters with additional honey and serve immediately.
