Preheat the oven to 350°F.
Line a baking sheet with parchment paper.
Cover goji berries with warm water for about 5 minutes to soften.
Drain well and gently pat dry.
In a bowl, stir together oats, oat flour, baking soda, cinnamon, and sea salt.
In a separate bowl, whisk butter, maple syrup, egg, and vanilla until smooth.
Pour wet mixture into dry mixture and stir until fully combined.
Fold in chocolate chips and soaked goji berries.
Scoop about 2 tablespoons of dough per cookie and place on a baking sheet, gently flattening slightly.
Bake for 10–12 minutes, until edges are set and centers look just slightly soft.
Let cookies cool on the pan for 5 minutes, then move to a rack. They firm up as they cool.
