Blueberry Filling:

  1. Preheat the waffle iron.

  2. In a large bowl, whisk together 2 cups all-purpose flour, 1 teaspoon salt, 1 tablespoon baking powder, and 2 tablespoons white sugar.

  3. In a smaller bowl, whisk together 2 large eggs, 6 tablespoons melted butter, 1 ½ cups milk, and 2 teaspoons vanilla extract until well combined.

  4. Add the wet ingredients to the dry and mix until just combined. The mixture will be lumpy.

  5. Fold in 4 ounces fresh blueberries.

  6. Spray the waffle iron with baking spray and cook waffles until light brown and slightly crispy.

  7. Serve dusted 1 tablespoon powdered sugar and a drizzle of ½ cup maple syrup.
