Blueberry Lemon Bars
  1. Zest 1 lemon

  2. Preheat oven to 350°. Code 8 x 8” square baking pan with nonstick cooking spray or line with parchment paper.

  3. Crush graham crackers and melt butter.

  4. Combine gram cracker crumbs butter cane sugar and zest from 1 lemon in a small bowl. Press onto bottom of pan and bake 10 to 12 minutes. Remove from oven and cool to room temperature.

  5. Zest remaining lemons.

  6. In medium bowl wisk condensed milk, lemon juice, and lemon zest. Add egg yolks and whisk until smooth and slightly thickened. Transfer to pan and smooth filling so it covers crust completely. Carefully sprinkle blueberries onto filling. Do not stir.

  7. Bake 16 to 18 minutes until filling is set and doesn’t jiggle. Cool completely at room temperature, then chill 1 hour before serving.
